A delicious mixture of tropical fruit with an exotic tang, makes a delicious and healthy dessert or a refreshing snack.

Method

  1. Start by preparing the fruit. To stop the banana going brown, squeeze the lemon juice over it.
  2. Then in a large bowl mix together the sugar, orange juice, lime juice and chopped ginger and gently stir in the fruit.
  3. Sprinkle the grated coconut over the fruit and serve immediately.

  • 1 tbsp soft brown sugar
  • juice of 1 orange
  • juice of 1 lime
  • 1 tbsp crystallized ginger, chopped
  • 1 mango, chopped
  • ½ cantaloupe melon, chopped
  • ½ pineapple, chopped
  • 2 bananas, sliced
  • juice of 1 lemon
  • 3 tbsp fresh coconut, grated
