Blackberries are one of the highest sources of Vitamin C, so if oranges and lemons are not to your taste, try this tangy cream instead. It's one of the quickest desserts you could possibly make!

Method

  1. Place the fruit in a heavy-based pan with the sugar and heat until they become soft and shed their juice.
  2. Press the fruit through a sieve and cool. Reserve the juice.   
  3. Whip the cream* in a large bowl and gently fold into the fruit.
  4. Chill in the fridge and serve with a little of the juice.

Serves:    4

Time:      15 minutes, plus cooling time (approx. 4 hours)

Not suitable for freezing.

  • 500g blackberries, fresh or frozen
  • 100g sugar
  • 300ml whipping cream
