A fresh and healthy fruit salad with an Eastern twist, this light dessert is perfect for summer celebrations.
Method
- To prepare the lemon grass syrup, remove the tough outer layers of the lemon grass and hit it with a rolling pin to break the stems open and release the flavour. Then add to a pan with the sugar and 200ml water.
- Stir over a low heat to dissolve the sugar. When it begins to boil, take the pan off the heat and leave the lemon grass to infuse until the syrup is cold.
- Gently mix the chopped fruit into the syrup. Then add the flesh and seeds of the passion fruit and the juice of two limes.
