This creamy pasta dish is easy to prepare and will be on the table in no time.

Method

  1. Cook the pasta following the instructions on the packet, then drain and allow to cool in a large bowl.
  2. Add the tomato, cucumber, raisins and cheese to the bowl and stir together. Then mix thoroughly with the yoghurt and mayonnaise.
  3. Serve each portion on a lettuce leaf and scatter with the sliced spring onions.
  4. Alternatives: add 25g toasted cashew nuts. If low-calorie mayonnaise is unavailable, use standard mayonnaise but add half the amount and top up with more yoghurt.

  • 3 tbsp natural yoghurt
  • 2 tbsp low-calorie mayonnaise
  • 8 large lettuce leaves
  • 3 spring onions, sliced
