This creamy pasta dish is easy to prepare and will be on the table in no time.
Method
- Cook the pasta following the instructions on the packet, then drain and allow to cool in a large bowl.
- Add the tomato, cucumber, raisins and cheese to the bowl and stir together. Then mix thoroughly with the yoghurt and mayonnaise.
- Serve each portion on a lettuce leaf and scatter with the sliced spring onions.
- Alternatives: add 25g toasted cashew nuts. If low-calorie mayonnaise is unavailable, use standard mayonnaise but add half the amount and top up with more yoghurt.
